東京コーヒーは、東京の端にある二世帯住宅の玄関先から始まりました。アメリカ人と日本人のハーフの兄弟が「新鮮で美味しい」コーヒーを求め、フライパンや手回し式のロースター等を使って、焙煎を続けていました。
YouTubeでTED TALKs の講義を見た二人は、取り憑かれたようにコーヒーを焙煎し・飲みました。TED TALKsの講師は、「コーヒーは生鮮食品だけど、世の中で販売されているコーヒー豆の９割は、古く味の無い、香りの抜けた、不味い物だ。」と語っていました。「善は急げ」と直ぐにコーヒーの生豆を注文し、フライパンでの焙煎にチャレンジ。
コーヒーの味と香りは大好きだったけど、弟はコーヒー を飲む事が出来なかった。チェーン店のコーヒー屋やスーパーで買うコーヒーは、飲めば具合が悪くなっていたました。
無知な状態で、数ヶ月間、取り憑かれた可能に、コーヒーを勉強し試行錯誤を経て、二つの「結論」にたどり着きました：
・新鮮な焙煎のコーヒーは、弟の身体の 悪影響（頭痛や吐き気、気持ち悪さ等）を起こさなかった。
・私達の自家焙煎の コーヒー （後にTOKYO COFFEEと呼ばれる）は今まで飲んだ中で一番美味しい。
この様な経緯で今の東京コーヒーのビジョンは生まれました。健康に良く、美味しいコーヒーを、人に届ける事！また、コーヒー ビジネス を通じ、世界中の コーヒーファームの従事者、地域社会を祝福する事。
This is the origin story of how to half American half Japanese brothers started a coffee roastery, which has grown to be a company selling more than 60,000 bags of coffee each year!
It all started with a TED Talk episode that we watched. The crazed speaker talked about how 90% (according to him) of coffee in the market is “Old, stale, and disgusting. However, since coffee itself is healthy for you, no one ever knows that the coffee is horrible. And the funny thing is, ANYONE can roast coffee. People have been roasting coffee for thousands of years. No one needs an industrial roaster, they can do it with a frying pan.” We were shocked. Davy, the younger brother, had always liked the aroma and taste of coffee but whenever he would drink a mug full of coffee he would feel nauseous. We thought that this might be the answer to why he would feel sick after drinking coffee. And it tasted AMAZING!!
For the next few months, Noah and Davy roasted all of the coffee beans they could get there hands on, using woks and hand-roasters on Noah's balcony. We were obsessed with trying to figure out what makes coffee delicious and learning about the intricacies of the different beans and roast profiles that exist.
Our conclusion was that not only was the coffee we were roasting DELICOUS, but by purchasing organic coffee beans, we were able to produce coffee beans that are healthy for the body and friendly to the environment as well!
