私の好きなビール-イヴォ

知人とのビールを飲む席でこの連載の話題が出て、面白そうだと思って書き始めたのですが、当初からの懸念どおりイヴォに書かせるのにひと苦労しました。彼のビールに対する思いや性格を考えると書きにくいことだろうなとは思いましたが、何とか書かせたらとても良い文章だと私は思いました。今まで話をしてきて彼の考えは分かっていましたが、改めて読むと理解が深まるものです。

Beer story

what beers do you like?
Basic philosophy " i like the beer which I brew".
I like a lot of varieties of EUROPEAN BEERS , as well some homebrews of ancient and middleage (1400-1700)recepies, as well any of the old styles or forgotten styles of beer. In todays world most breweries try to please a bigger consumer quantity= target get the production high at any price. Same time a lot of this big breweries try to destroy smaller and little breweries to gain a bigger market.
The result is that a lot of beer styles or types are either not existing anymore or only have the old name ,but the flavour has been changed to get a bigger market. Actually a very sad story.

One of my hobbies is to research and recover old beer styles . For example in Germany where I grew up not far from Dortmund were many breweries in the 1970`s. 2 decades ago Dortmund was the city with the biggest beer production in the world for 15 years. I had the opportunity to drink beers (I started at the age of 14 years legal by law in those days) , the famous type was called " export ", a fresh ,well bodied ,golden colour and very bitter(not dry).
One brewery called BERGMANN (miner,as Dortmund was a coal miner city) made an Export, which I still keep in my heart. Unfortunately this brewery was bought off and closed by a bigger brewery.

Similar stories like this , I experienced several times, in Cologne where my grandparents lived I loved to drink some Koelsch of smaller breweries. Still for me is Paeffgen one of the oldest and smallest breweries in Cologne a
must on my Germany trips. I enjoy a lot of beers when I go once in a while for a visit with my family to Germany. Bamberg is as well a must = at least one night. I like the untouched beer culture of Bamberg such as RAUCHBIER,
MAERZEN,Schlenkerla, Helles , Ungesoundetes.....
As well I love Belgium beers as it is still one of the few countries where old traditions and beer styles are kept alive, such as Framboise,geuze,Kriek,.... and definately White beer or Wit.
I have been a lot of times in Great Britain, where I enjoyed a lot of nices Ales , porters , a big variety of Stouts....
In general I prefer to drink beer from smaller breweries or breweries untouched from modern times in form of High tech and mantain their old techniques.

Basically I would say I love a lot of beers , definately the atmosphere,location and occasion influence your choice of beer, as well the mood I am in at that moment.
The chance to get a beer with a touch from the past (This is what I call a real beer) from one of the smaller breweries will be first on my mind when to order or to buy a beer.

I hope that we at Baeren brewery can revive some of that lost beers , as well to provide you with what I call "real beer".

＜私の好きなビール＞

基本的には「自分の造ったビール」ですが...それはさておき。

私の好きなビールといえば、古代や中世に家庭で造られていたような古いレシピのビールや、すでに人々から忘れられてしまったような古いタイプのビールです。現在ではほとんどのビール会社は、どのような手段を使ってでもより多くの売上を上げようとします。時々は売上をあげるために、小さな醸造所を潰してしまう事さえあります。
その結果、多くのビールのスタイルやタイプが失われるか、もしくは、味がすっかり変わってしまい名前だけが残っているといった状態です。これはとても悲しい事です。

私の趣味のひとつは、古いビールのスタイルを発掘し、再現する事です。たとえば、私が育ったところからそう遠くないドルトムントでは、１９７０年代にはたくさんの醸造所がありました。２０年ほど前までは、ドルトムントは過去１５年にわたって世界で最もビール造りの盛んな都市でした。私がかつて飲んだことのあるビールで（その当時の法律では、１４歳からビールが飲めました。）、「ベルグマン」というブランドのビールがありました。ベルグマンとは鉱夫という意味で、ドルトムントが炭鉱の町であったことにちなみます。これは有名な「エクスポート」というタイプのビールで、フレッシュで、ボディがあり、非常に苦味のあるビールでした。これは今でも忘れられない味です。残念ながら、この醸造所は大手メーカーに買収され、やがて閉鎖してしまいました。

同じような話は、私の祖父母が住んでいたケルンでも何度か体験しました。ケルンでは、小さい醸造所で造られたケルシュを飲むのが大好きです。今でもケルンでもっとも古く小さい「パフケン」という醸造所がありますが、ドイツに戻ったとき、欠かさずここのビールを飲みに行きます。また私はドイツに家族と旅行する際には、必ずバンベルクに立ち寄ります。バンベルクには、たくさんの純粋なビール文化が残っています。ラオホビール、メルツエン、シュレンケラ、ヘレス等など...。同様に古い伝統のスタイルのビールが残っている数少ない国としてベルギーのビールも好きです。グーズや、クリーク、フランボワーズ、もちろんホワイトビールやヴィットも。英国へも何度も行きましたが、ここではたくさんの素晴らしいエールやポーター、様々な種類のスタウトを飲むことができます。基本的に私は、小さい醸造所または、現在のハイテクを使わずに古い醸造技術を大切にしているような醸造所のビールが好きです。

「私の好きなビールは」という質問の答えとしては、「たくさんの様々なビール」というべきでしょう、というのはビールの味は飲む雰囲気や場所、そしてその時の気分によって違うものだからです。もし自分がビールを注文する場合は、古い伝統をもった小さい醸造所のもの（私がリアル･ビールと呼ぶもの）を一番に選ぶでしょう。

私はベアレン醸造所で、失われたビールのいくつかを復活させ、私が「リアル・ビール」と呼べるものを、みなさんに提供できたらと思っています。
